White Chocolate Cupcake
- 2 3/4 cup flour
- 1 tsp baking soda
- 2 1/2 tsp baking powder
- 1 tsp salt
- 3/4 cup white hot chocolate powder Caotina brand
- 1 1/2 cup granulated sugar
- 1 cup vegetable oil
- 1 cup buttermilk
- 1 tsp vanilla extract clear
- 6 egg whites
- Preheat oven to 350°F . Prepare cupcake pan with paper liners.
- In medium sized mixing bowl, sift together dry ingredients; set aside.
- In large mixing bowl, beat egg whites until medium stiff. Add sugar – beat thoroughly until smooth. Add oil and vanilla – beat on high until frothy.
- Alternating…add flour mix and buttermilk; set mixer to low. Finish mixing by hand.
- Fill cupcakes 3/4 full.
- Bake for 22 minutes.
- Cool completely. Frost with your favorite buttercream.
Hot Tip: This doesn't lend itself to substituting half of the oil with applesauce - some of the sparkly vanilla flavor is lost. The cake turns out wonderfully, but the flavor is diminished a wee bit.
