Plum Layer Cake
- 2 2/3 cup flour all-purpose
- 1 tsp baking soda
- 2 1/2 tsp baking powder
- 1 tsp salt
- 1 tsp cinnamon
- 4 eggs
- 1 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup vegetable oil
- 3/4 cup buttermilk plum flavor
- 1/2 cup walnuts chopped, not too course or too fine
- 2 cup plum pieces fresh, skinned, stone removed
- 1/2 cup yogurt plum flavor
- Preheat oven to 350°F . Prepare cake pans with non-stick spray.
- In medium sized mixing bowl, sift together dry ingredients; set aside.
- In large mixing bowl, beat eggs. Add sugar – beat thoroughly until smooth. Add oil and vanilla – beat on high until frothy.
- Combine yogurt and buttermilk.
- Alternating…add flour mix and buttermilk-yogurt mixure; set mixer to low.
- Fold in plum pieces and walnuts.
- Divide batter among cake pans.
- Bake for 32-36 minutes.
- Cool completely before removing from pan.
Frost with luscious Vanilla or Cinnamon Buttercream. Consider adding plum jam as a filling or garnish with plum preserves.
