Cornflakes, Mallows, and Chocolate
Gluten-Free Cornflake Marshmallow Treats with a Lindt Dark Chocolate Shell
The classic no-bake… marshmallow treats with crunchy goodness! I found a box of GF cornflakes in the market and this recipe tumbled into action.
Crispy rice cereal is a the basic-ingredient jumping off place – which leads the way for just about any crunchy cereal that can hold up to molten marshmallows. I love using oat rings, flakes, squares, and bits. “The world is my cereal oyster!”
Next up… adding raisins and nuts.
For now, this lunchbox treat went together like this.
Melt the 3T of butter then add 10oz fresh marshmallows. My first attempt at this recipe, I used a bag of out of date mallows – it was unpleasant!
Just at full melting, remove from heat and add cereal – no not let the mallows and butter get too hot as the temperature needs to stay low.
“How much cereal?” Until it’s coated… not too much, not too little. Maybe around 6 cups?
Typically I would press this directly into a 9 x 13 baker, but I wanted to be able to lift the entire dessert out. I used parchment paper to make things super easy.
It’s as flat as possible, but since these are flakes – it simply won’t be perfectly smooth.
The Lindt Dark Chocolate shell is 200gr of chocolate and 4T butter, melted together. It’s thick, which is great and it will fill the crevices very nicely.
Gently ease the chocolate to all the edges and carve in a decorative swirl.
I popped this into the refrigerator for a couple hours to ensure the chocolate had a chance to set – it was perfect. That makes this no-bake a wonderful same-day treat.
Lifting it right from the baker onto the slicing board was too easy. I love using my Homer Laughlin Fiesta Dinnerware 9 x 13 baker for all my no-bake recipes.
Oh my goodness… all those layers of crunchy!
These sliced squares are completely delicious and could be turned into an upscale version of an all-time favorite perfect for most any dessert table.
